stuffed mushroom madness!

I just got home from being in Mexico for two weeks (where almost everything is cooked in animal fat) so I had to get creative...and this idea made for a super simple, delicious, healthy, and filling lunch actually mostly every day! Here's how to make:
Ingredients (you can vary it up but here's what I used)
  • Mushrooms, of course
  • one Avocado, mashed
  • one Tomato, chopped
  • Black Beans
  • Cilantro
  • Hemp Seeds
  • one Lime
Directions:
  1. remove mushroom stems and flip over heads so that they look like little bowls
  2. put a little scoop of black beans in the "bowls" of the mushrooms
  3. mash up avocado and add chopped tomatoes as guacamole
  4. add a little scoop of guac to each mushroom
  5. cilantro can sit on top of the guac
  6. squeeze lime juice over the tops
  7. sprinkle hemp seeds over the top 
  8. eat!
