give me a pizza that pizza!

Curry Lentil Rice Pizza:

This was created by Brendan Brazier, you guys should totally get his Thrive book or borrow it from the library- it will blow your mind and so will this pizza, pinky promise!

Ingredients:

crust:
  • 1.5 cups cooked brown rice
  • 1.5 ground lentils (I used yellow peas, uncooked)
  • .25 cups coconut oil
  • 2tsp curry pwder
  • 1tsp basil
  • salt to taste
topping:
 (how much of each veggie used is entirely up to you!)
  • sliced tomato, one
  • onion sliced, as much
  • chopped bell peppers
  • thinly-sliced eggplant
  • grated carrot
  • 1tsp oregano
  • 1tsp thyme
  • olives
  • baby spinach leaves
  • tomato paste or/and vegan pesto (just olive oil, basil, garlic, and salt!)

Directions: 
  1. preheat oven to 300 degrees
  2. mix up the rice, ground lentils with coconut oil (if you have a food processor, mix them up in there but if you're like me who has a teenie tiny one, I just mixed them with a fork and then my hands)
  3. add the curry powder, basil, and salt to the crust mix
  4. put the crust dough on a flat, metal, cooking sheet and flatten it into a pizza shape/thickness with your hands
  5. add the tomato paste and/or pesto and smear it everywhere with a spatula or knife
  6. all all of the veggies and the herbs on top
  7. pop it in the oven and allow it to cook for (give or take) 45mins
  8. take it out and gobble it all up! I would recommend sharing with a friend or two so you don't over stuff yourself and get a food baby because dang that pizza is gooooooooood!
