I don't know if any of you have tried kale, but it's not too tasty by itself. Kale is a type of cabbage with large, kind of thick and slightly bitter (in my opinion) leaves. However, once you learn some facts and simple ways to eat it, I'm sure you'll be a fan of the amazing kale like me.
Here are some fun facts for the day:
- Kale is PACKED with antioxidants. Antioxidants get rid of free radicals in your body and overall reduces stress... and we all know how bad stress is and can be!
- Kale has over 100% of the daily value of Vitamin C, K, and A in just one cup!!! (webmd)
- it's high in IRON and CALCIUM!!! Us vegans really need to make sure we are getting all that good stuff!
- contains Omega-3 fatty acids, thus acts as an anti-inflammatory for our bodies!
- fibrous and sulfurous, kale is a great liver detox agent!!! (mindbodygreen)
So now you now how freakin' awesome this green stuff is... the question is: how to eat it? I'm a firm believer that my mind can be changed about any given food I originally hate, if combined with something or made in a certain way. Here are some ideas!
- Kale Chips!! Yum, these little guys are amazing and addicting and everything wonderful! Set the oven to 350 degrees, rip up the kale in chunks and spread them across a cookie sheet, top them with chopped raw garlic, olive oil, and salt, and they will get crunch within around fifteen minutes! These crunchy critters are seriously a personal favorite!
- Asian Kale Salad: shred up the kale and mix it with sesame seeds, sesame oil, rips of cabbage, grated carrot, and ginger! It's delicious!!!
- Garbanzo-Tomato-Kale Salad: Roast up some garbanzo beans with tomatoes, balsamic, lemon juice, and basil. Toss it with steamed or raw kale and spinach leaves! Yum Yum!
- Kale Wraps: Soak the kale in some water to soften it and wrap it around quinoa, chopped up veggies of choice, beans, and dip it in some soy sauce!
- Juice: I've juiced kale many a time, and it's awesome! Juice makes it more digestible, and if you juice it with apple, ginger, celery, cucumber, and carrots, you can't even taste the bitterness at all!
Well, now you know; and in a hypothetical situation of being stuck on an island with nothing to eat but one food of choice, I hope you are better able to logically assess the question and choose kale!
