Meditative protein

Today was absolutely wonderful for me, as I hope it was for everyone else too! It was gorgeous outside; the sun was shining, the bees were buzzing, and everything was bright and colorful. I came home from the river and decided it was probably a good time to meditate... but first, I was as hungry as a bear! I needed something hardy and filling and decided to make something simply delightful :) You see, even my little kitty enjoyed it... so you all will definitely love it!


Green Hummus Stuffed Sweet Peppers:

Ingredients:
  • 3 kale leaves
  • .5 of a stalk of broccoli
  • .5-.75 chopped up zucchini
  • 3 cloves of garlic
  • salt (to taste)
  • .25 squeezed lemon juice
  • a can of chickpeas
  • olive oil and water (to help blend- slowly add until a thick hummus texture)
  • a bell pepper (to stuff)

Directions:
All you do is blend everything together (excluding the bell pepper), cut a bell pepper (color of choice) in half, rip the seeds out, and stuff that baby with your super green hummus! You'll have lots of extra green hummus to use with other foods- crackers, carrots, pasta sauce, whatever your pretty hearts desire!

Note: I ate this with iced green tea. All I did was heat up a half of a cup of water and let the tea bag steep for four minutes, added cold water, ice, and a splash of almond milk and vanilla extract, and it was quite refreshing!


Afterwards, I sat on my picnic bench overlooking a big, open, beautiful field, all lit up in yellow sunlight, and meditated for fifteen minutes. It wasn't a long session, but I focused on my breathing and how wonderful the sun and fresh air felt, and it made the rest of the day a really, really good day. I hope you all enjoy this lunch as much as I did... and will continue to, since I'm making this dish many more times to come!
