maybe I'm going bAnAnAs!!!!!!

Tonight I made almost the exact same banana dessert that I made last night... just slightly transformed.
Instead of one banana split, I created little appetizer-type desserts using cut-up banana! Check it out:

Baby Banana Splits (on a stick):

Ingredients:
  • 2tbsp raw cacao powder
  • almond milk (you have to pour slowly, see what right consistency is)
  • 2tbsp peanut butter
  • handful of coconut shavings
  • 1tsp vanilla extract
  • 2tsp coconut sugar
  • 2 bananas cut in 2 inch chunks
How to make these little poppers?
  • mix cacao powder with almond milk, peanut butter (may need to heat a tad to better mix), vanilla extract, and coconut sugar together. This should make a paste the same consistency as frosting.
  • lay out the handful of coconut shavings on a cutting board or bowl, put to the side.
  •  take each banana chunk and dip into the chocolate-pb mixture (may have to use spoon to help you cover it).
  • roll banana in the coconut shavings
  • stick a toothpick into the tops of the bananas and put them on a tray or plate and put them in the freezer (may take 15 minutes)
These are great because 1. they are easier to eat 2. you can bring them to parties, potlucks, get togethers, or- in my case tonight- girls night with my three best friends. This is a vegan's absolute go-to when craving icecream or anything sweet!
