Last year, my favorite thing to pack for a snack or part of my lunch was bell peppers! I'd sit in the cafeteria and whip out my bag of bell peppers (of any color but green) and start eating them like apples! Mmmmmmm- best thing EVER!... until I started stuffing them with deliciousness! Here was my fabulous lunch today! (amazing how something so small could be so filling!!!)
Bell Quinoa Bowl:
All you do is hollow out a bell pepper (color of choice, besides the green bleck!), and then fill it with quinoa and veggies of choice! What I did was mix up some quinoa, black beans, broccoli, spinach, and onions, and added a little salt and sesame oil. Then, I stuffed the concoction inside of my bell, topped it with some sesame seeds, and voila! This is actually a really good lunch idea for school because it won't take up a lot of precious purple camo lunch-box space, and it's super nutrient dense with all of the protein, iron, and calcium! I saw this picture actually, and it said one cup of black sesame seeds has an equivalent amount of calcium as I think it was seven glasses of cow milk! Take THAT all you non-believers of vegan nutrition! One of the most irritating things that people attack me about is protein and calcium! Well- they can look up the facts! Anyway, digressing a little there haha, enjoy this simple snack or lunch and vary it up whenever you want!!!!
